Today was wonderful! Tiring and nonstop, but wonderful. We started off with making our pressed seaweed salads. I feel very happy with how mine turned out. Everybody did a great job and they all were unique. I love learning from the chef and my classmates. There are a lot of very talented people in our group. Mary and Sagal pictured below, very sweet and talented ladies. Then we have Jason, and Fred goofing off!

My pressed seaweed salad. The flavors were nice, mellow on the seaweed flavor, with a sweet orange-sesame dressing. Very tasty.
We then had a class challenge, the chefs brought hidden ingredients out, broke us up into smaller groups, they gave us 15 min to prepare a recipe and 30 min to create and plate it. Although our recipe (a light summer lasagna) didn’t win, I really really liked it, I do think it could have had a bit more salt and could have been shorter. I really loved how the flavors and textures blended. We used pineapple, jicama, lime, macadamia nut cheese, avocado lime cream, and had a cabbage salad on the side. We had fun! We got it on the plate and we enjoyed it! I think overall it’s a win
